Thankfully this is only a 4 day week and we have the holiday coming up on Friday. I am ready for a day off already. Here’s some highlights from our weekend:
I started out Friday morning making London some fresh homemade mini blueberry muffins. I love making her mini anything because it’s fits perfectly in the palm of her little hand. Plus, she thinks it’s so fun that they are tiny like her. The only bad side is she wants to eat like 5 in a row. I also had some extra bananas on hand so ended up making mini banana muffins on Saturday as well. This recipe here is the one I like to make with applesauce. I also cut the sugar down to 1/3 cup because she doesn’t need that much sugar and you can’t tell a difference in taste at all.
Saturday afternoon we went to look for some living room furniture without success so we walked across the street to the outlet mall only to get stuck in the rain. So, we decided it was time for dinner and cocktails.
Sunday morning we started with our usual walk along the trails around our house. One of my favorite things about where we live is all the trails we have surrounding us for walking, biking, and running. We definitely take advantage of them. Along our walk is a park which we periodically will stop at depending on how much time we have. London obviously loves the park going up and down the slides a gazillion times. This is her sweet happy face when we first got to the park.
Later for dinner Nathan made his guacamole which is amazing and so yummy along with a new recipe I found on Pinterest of course. I have to say Nathan was leary at first and so was I, but these tacos turned out incredible and are definitely being made again.
