Summertime for me is all about pool days, evenings on the deck, and a nice fruity cocktail. I have always been a fan of fruity cocktails and the Piña Colada in particular. However, I am not a fan of all the calories and bloaty feeling that come along with a delicious Piña Colada. I found myself craving one a few weeks ago and wondered how I could make a skinnier version. I found this recipe and made a few tweaks specifically opting to omit the coconut flakes. You could also use frozen pineapple chunks and still achieve the same taste. Next time your happy hour is calling go make this and pretend you are on a beach somewhere enjoying the ocean waves and deliciousness of this drink.
