Last night we took advantage of the amazing weather and sat outside on the deck and grilled some turkey tenderloin tacos. I found this recipe looking back through one of my old cookbooks and so glad that I did. The tenderloin was so tender and had just the right amount of spice and with the fresh homemade avocado salsa it made for a perfect dinner on the deck.

  • 2 Tomatoes, Seeded and Diced
  • ½ Cup Minced Scallions
  • ½ Cup Minced Green Bell Pepper
  • ½ Cup Chopped Cilantro
  • Salt and Pepper
  • For The Turkey:
  • ½ Teaspoon Onion Salt
  • ½ Teaspoon Garlic Salt
  • 1 Tablespoon Paprika
  • ½ Teaspoon Cayenne
  • ¼ Teaspoon Dried Thyme
  • ¼ Teaspoon Black Pepper
  • 1 Pound Turkey Breast Tenderloins
  • 1 Tablespoon Extra-Virgin Olive Oil
  • 1 Onion, Sliced into ¼-Inch Rings
  • 2 Jalapenos, Halved Lengthwise
  • 2 Limes, Cut Into Quarters
  • 6 Whole Wheat Tortillas or Pitas
  • 1½ Cups Shredded Romaine Lettuce
  • ½ Cup Sour Cream
Instructions
  1. Mix the avocado, lime juice, tomatoes, scallions, bell pepper, and cilantro in a small bowl. Season with salt and pepper. Cover and refrigerate for 30 minutes.
  2. Mix the onion salt, garlic salt, paprika, cayenne, thyme, and black pepper. Place the turkey on a plate and drizzle both sides with the oil. Sprinkle with the spice mixture.
  3. Place the turkey, onion rings, and jalapenos on the grill over high heat. Grill the turkey for 7 minutes. Squeeze a lime quarter over the meat, turn the pieces, and squeeze another lime quarter over them. Grill for 8 minutes or until a meat thermometer reaches 170F and the turkey is no longer pink in the center. Grill the onion and jalapenos, turning frequently, until charred. Remove all from the grill.
  4. Allow the turkey to rest for 5 minutes, squeeze the remaining lime quarters over the meat, then cut the turkey into ¼-inch strips.
  5. Fill the tortillas evenly with turkey, onions, jalapenos, lettuce, avocado, salsa, and sour cream.
  6. Makes 6 Servings
