Blackberry Mojito

Lately, I’ve been on a mojito kick.  I can’t seem to get enough of them .  I have been trying to make a few different kinds and this past weekend I decided to go with a blackberry mojito.   We had picked some fresh blackberries the weekend before from my in-laws farm and I had frozen them thinking I’d use them at some point.  With the weather being in the high 90s this weekend a cold refreshing cocktail was on the menu. After trying several different varieties this is the best recipe I came up with. Enjoy! 

≈What You’ll Need≈

8-12 fresh mint leaves
1/2  cup of blackberries
1 tablespoon light agave syrup
2 tablespoons sugar in the raw
1/2 cup light rum
1/4 cup fresh lime juice
Crushed Ice
Lime-flavored club soda
Lime slices for garnish

≈What You’ll Do≈

Add the mint leaves, blackberries, and agave syrup to a cocktail shaker. Using a muddler or the handle of a wooden spoon, muddle the ingredients until the mint is fragrant. Add the ice cubes, rum, and lime juice. Cover and shake  to chill.

Fill 2 glasses with crushed ice and strain the liquid into the glasses. Top with club soda and garnish each with a slice of lime.
