Every Sunday I do meal planning for the week, make out my list, and go grocery shopping. We have a $100-$125 a week grocery budget that we try to follow. In a few weeks I’ll be sharing how we stick to this budget and also sharing our favorite meals. Today I am sharing what we had last night for dinner because it turned out better than expected. Yesterday we were discussing how we wanted to eat some different salads this week and after visiting the farmers market this weekend and picking up some fresh spring mix it only seemed appropriate. I used ingredients that were already on my shopping list and threw in a few extras we already had on hand. Kind of like throwing in everything but the kitchen sink.
≈What You’ll Need≈
Lettuce of your choice- I used Spring Mix and Romaine Lettuce
2 Grilled Cx Breasts- I rubbed some Herbs De Provence on the chicken before grilling
1-2 Avocados sliced
1/2 cup cherry tomatoes
1/2 cup garbanzo beans
1/4 cup feta cheese
1/4 cup dried cranberries
1/4 cup pine nuts
Dressing of your choice, I used Balsamic Vinegar and the hubby used Ranch.
Grill your chicken, slice up the avocados and cherry tomatoes.
Mix everything together in a bowl and enjoy!
