• 2 Kale Leaves, thick stems removed or a handful of chopped up Kale
  • Small handful of Spinach
  • Flesh of 1 small Avocado, chopped
  • 1/2 cup coconut water
  • 3/4 cup unsweetened almond milk ( I use coconut milk because London is allergic to tree nuts)
  • 1 date, pitted and chopped

Place all the ingredients in a blender or food processor and whizz until smooth.

This is a favorite smoothie we like to drink especially as the weather starts to get warmer, although we are having a shortage of that around here. The recipe is from the book Eat Beautiful again and every ingredient in this smoothie has skin-benefiting properties. It has healthy fats that helps to plump and smooth skin as well as vitamin E to help protect it from free-radical damage. We love this smoothie in the morning to get going or on the weekend for a refreshing drink.

Yesterday, was technically the first day of Spring yet it in no way feels like Spring. This has been the endless year of cold weather I feel and I am desperately craving warmer days with the windows open and dinner on the porch. Last night we were talking with London about what we are excited about for Spring and came up with a little list.

The smell of fresh cut grass

Walking around the neighborhood looking at all the flowers blooming all over

Going to our favorite park and watching the roses come up

Backyard BBQ’s with friends

Nonstop patio weather with crisp glasses of Rosé (obviously this is our wish and not hers)

Walking around in sandals and shorts vs boots and coats

Can’t wait for ya Spring, so hurry up!
